These are two of the dessert offerings that followed Dr. Jay's lecture on February 16, 2006.
From The Ayurvedic Cookbook by Amadea Morningstar and Urmila Desai (available for sale at The YOGA WAY).
- Vata - Pitta 0 Kapha
1/2 C plus 2 T toasted sunflower seeds
1/2 C shredded, unsweetened coconut (omit for Kapha)
1/4 C sunflower butter
1 T maple syrup
1 t almond extract
1/2 t coriander powder
Grind the sunflower seeds in a blender to a coarse meal.
Miss all the ingredients together in a bowl and press into 1 inch balls.
--Vata, + Pitta, +Kapha
1/2 C sesame seeds
1/3 C honey
2 T raw sunflower seeds
2 T tahini or sesame butter
1/2 C toasted wheat germ
1/8 t sea salt
1/2 C unsweetened shredded coconut plus add'l for garnish
1 t vanilla extract
Grind the raw sunflower seeds into a rough powder int he blender. Combine all ingredients into a stiff and slightly crumbly dough. Press into balls and roll in coconut.
